Gangstabread Cookies

Ain't nuthin' but a Gangsta Christmas party...





 WHAT is life right now?! It’s a Monday morning and I’m typing this blog post while listening to my super awesome custom Christmas station by our beautiful tree, drinking coffee and eating gingerbread cookies. I’m waiting to go into work later this afternoon (only for TWO HOURS!) just to decorate some macarons for Christmas. It probably hasn’t been since high school that I’ve been able to enjoy the holiday season this much.  I have SO much time for Christmas movie watching and best of all baking!


The other day I was walking around the mall when I came across these pretty amazing cookie cutters at Forever 21. As a huge hip-hop fan and a professional baker I just had to buy them for myself. I knew instantly these fine fellas would be my gingerbread cookies this year and they worked out so well! I found an amazing, super soft and chewy recipe dough online and made my own yummy cream cheese icing which is perfect for dying and decorating these tasty cookies. (That sentence had a ridiculous amount of adjectives, and this is why I am not a writer.) These were a HUGE hit when Peter took them to his office, and I think I might bake some and prep some bags of red, green, and white icing with sprinkles and set up a “Have A Hip-Hop Christmas’ cookie decorating station at our Christmas party this year. Or these could make a great gift for the Biggie, Tupac, and NWA fans in your life. Because thugs like the holidays too.

Ginger Bread Cookies:
·       3 cups all purpose flour
·       ¾ cup light brown sugar
·       ¾ teaspoon baking soda
·       1 tablespoon ground cinnamon
·       1 tablespoon ground ginger
·       ½ teaspoon ground cloves
·       ½ teaspoon all spice
·       ½ teaspoon salt
·       12 tablespoons butter (room temp and cut into pieces)
·       ¾ cup dark molasses
·       2 tablespoons milk


In a mixing bowl add dry ingredients and stir together with a fork until combined. Then with mixer on low speed add the butter pieces. Mix at medium-low speed until the mixture is sandy and resembles fine meal, 1 to 2 minutes. Reduce the speed to low and with the mixer running, gradually add the molasses and milk; mix until the dough is evenly moistened about 20 seconds. Scrape sides of bowl and increase the speed to medium and mix until thoroughly combined.
Place dough onto a  lightly floured work surface and divide it in half. Working with one portion at a time, roll the dough ¼ inch thick between 2 large sheets of parchment or wax paper. Leaving the dough sandwiched between the parchment or wax paper, stack the dough on a baking sheet and refrigerate overnight for best results. (This keeps the cookies from spreading when you bake them and they hold their shape so well.) If wanting to bake same day you can freeze the dough for 20 minutes and then cut your shapes. Preheat the oven to 350 degrees. Line baking sheets with silpat or parchment paper. Remove one dough sheet from the freezer or fridge and place on the counter. Peel off the top parchment or wax paper sheet. Gently cut the dough with cookie cutters in desired shapes. (If using these specific cutters they’re designed in the most awesome way! First use the imprint of the cutter with a slight bit of pressure to get the detail of faces. Once the dough is all filled go back with each cutter on the other side of it to cut out the actual cookie from the dough. It’s a two sided cutter to make this super easy! Transfer the shapes to the prepared baking sheet very gently and spacing them ¾ inch apart. Re roll the scrapes and place between parchment again and pop in the freezer for 10 minutes to be able to get more cookies from them! Continue this process until dough is fully used. Remove one dough sheet from the freezer or fridge and place on the counter. Peel off the top parchment or wax paper sheet. Line baking sheets with silpat or parchment paper. Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 9 minutes. Do not over bake. Cool the cookies on the baking sheet for 2 minutes, then remove the cookies with a wide metal spatula to a wire rack; cool to room temperature. Once cooled, decorate with cream cheese and enjoy!

Cream Cheese Icing:
1- 8 ounce package cream cheese (room temperature)
1 stick butter (room temperature)
1 ½ Cups powdered sugar
1 teaspoon clear vanilla extract.

In a mixer cream together cream cheese and butter on medium-low speed for a minute. Then on low speed add sugar. Put on medium and mix for another minute. Scrape bowl and add vanilla. Mix on medium-low speed for a few minutes until combined and slightly fluffy. Divide among bowls to dye any colors you choose and have fun decorating!!!



                           
I used a regular gingerbread cutter to make some with Wu Tang chains because YES.

Gingerbread Nutella Donuts







I LOVE the holidays! The music, the movies, the chill in the air, and love all around! But most of all I LOVE holiday baking! My family as I’m sure yours too, always have our traditional recipes we simply have to make every year, and these are recipes that only come out for Christmas. However I really enjoy creating and discovering new ideas each year to try out. Recently I’ve been a Pinteresting fiend in regards to donuts and I stumbled upon a few recipes that gave me a great idea; Gingerbread Nutella Donuts! I combined two types of donut ideas and created my own recipe that turned out pretty darn well if I do say so myself. These yummy baked cake donuts are covered in a thick nutella icing and colorful sprinkles and are simple and delicious. Not too rich, but packed with christmasy flavor!

These donuts are a great to make ahead for Christmas morning, or a holiday brunch at the office, or even packed in cute boxes with bows for gift giving if you’re on a budget! They definitely won’t disappoint! I hope you enjoy the donut of the month and Happy Holidays!   


Gingerbread Donuts (This recipe makes about 12 donuts)
1 cup All Purpose Flour
1 tsp Baking Powder
¼ tsp Baking Soda
¼ tsp Salt
1 tsp Cinnamon
1 tsp Ground Ginger
¼ tsp Allspice
¼ tsp Ground Cloves
¼ Cup Brown Sugar
1 Egg (Room Temp)
3 Tbsp Molasses
1/3 Cup Milk (Room Temp)
1 ½ tsp Vanilla extract
3 Tbsp Melted Butter (NOT HOT!)

Preheat oven to 350 degrees. With cooking spray lightly grease donut pan. In a large mixing bowl whisk together all dry ingredients. In a smaller bowl whisk egg then add remaining ingredients. (It’s important everything be room temperature or the butter will harden back up and you’ll have curdily, gross mess.)
Fold wet ingredients into dry until just combined. Pour into piping bag and cut off tip. Pipe into donut pan filling each ¾ full. Bake 8-9minutes. Cool completely before icing.
 
Nutella Icing
½ Cup Powdered Sugar
1 Tbsp Hot Water
2 Tbsp Nutella

Using a fork stir together sugar and water. Once combined switch to a rubber spatula and add Nutella mixing until smooth. Ice cooled donuts using your finger very gently so not to tear the donuts.I know this sounds weird but the icing is a bit thick and goes on much better this way and gives you the most control. Top with sprinkles of your choice and enjoy with a cold glass of milk!

**Sprinkle tip: If you want to coat the top of the donut with sprinkles instead of a light dusting pour a lot of sprinkles on a plate and dip the entire top of the donut in the sprinkles pressing gently. Tis the season to be generous with the sugar!

Holiday Gift Guide for the Erin McGee in Your Life

I know this time of year EVERYWHERE you turn there is a ‘Holiday Gift Guide’ for every type of person or animal on the planet. Holiday Gift Guide for the Girl You Love but Aren’t Ready to Marry. Holiday Gift Guide for your Side Chick. Holiday Gift Guide for the Owl Lover but is Terrified of Real Owls. Holiday Gif Guide for the People You Work With but Really Can’t Stand but You Have to Get Them A Gift Because They’re Going to Buy You One and You Don’t Want to Look Like a Tool. Well, you get the idea. These online guides are somewhat helpful (depending on the price range they give. I mean, how dare someone suggest an $800 handbag for someone you maybe chat with 3 times out of the year???) because it’s not like all of those random people in our lives are copying you on the email containing their exact Christmas list to Santa.

Not to mention who are the folks still writing Christmas lists outside of the children contacting that jolly fella and being ‘proof read’ by their parents?

I mean don’t get me wrong the last list I wrote was in high school as I’m sure most people would admit to.  This makes a lot of sense considering parents probably asked their offspring to make one due to the fact they had no clue what to buy their freethinking, materialistic teenagers. There’s also the ‘grown-ups’ in college that email their parents a list of things they need to survive the rest of the year in school, and those needs become Christmas pressies. Or there are the really, really ‘grown-ups’ fresh out of college in the really, real world who send lists to mom and dad for things they need to survive life on their own.  Because well, it’s hard out there for a pimp.

Christmas becomes more of a what I need rather then a what I want like childhood. Mom needs a new set of hot rollers and a vacuum. Dad has let the yard go so he must need a new leaf blower, and of course a tie because duh. That’s not fun! Just like the skank character in Love Actually who we all hate because she’s a home wrecker wannabe says, “I don’t want something I need, I want something I want.” *

*Though her character is awful she makes a great point with this line.



With all of this being said I decided to create my own Christmas list because gosh darnit it’s fun! And I haven’t done it in a while! And I think anyone who reads this should do the same just for the fun of doing it.  Unlike childhood the chances of me receiving any of these on Christmas morning isn’t likely, (I’ve been a bit naughty this year) but a girl can dream! And by gosh by golly, it’s Christmas, and everyone knows anything is possible at Christmas! Maybe I’ll inspire something on your own Holiday Gift Guide and at least one of us will have one of the charming items on my list, and that is more then good enough for me! Happy Wishful Holiday Season, darlings!
